I'm new to the game and just wondering if anyone even races online anymore because every time I check the servers are always completely empty, and I'd like to race online.

Yes, I believe we are all in our annual hibernation in hopes for a new beta to bring in some more energy..

yeah, that´s pretty much it.
after a new beta the game goes back to fully active, but there´s been some time since a new one because piboso was full time working on kart racing pro steam release :)
