Why does the handlebar spin in the opposite direction in flight ?

Because of physics, that is normal like in real life.

In Replay you can choose the camera and there are different mods (helmets) with different replay cameras.

I would not say that in real life, if you turn the wheel in flight, it will not turn in the opposite direction.The GoPro camera can only be turned on in replay mode ?

Don't forget in MXBikes by default you are leaning the bike not steering. When you ask for the bike to be lent over the Virtual Rider will turn the steering in the opposite direction to lean the bike they way you asked, hence what you see in air.
