So last year my left arm got paralyzed and I found I can use pedals on MX Sim and I was still able to play. Is there a way to get the pedals to work on MX Bikes?

Yes, MXBikes can use more than one controller at once and you can map any control to the pedals. You can test your setup in the demo too so give it a try, just remember to calibrate all the axis in the game before binding controls.
